  • 2 tbspolive oil
  • 1 oniondiced
  • 4 garlic clovessmashed
  • 2 lbcrushed San Marzano tomatoes
  • 1 lbpork ribs
  • ½ cupred wine
  • basil, salt, pepperto taste

Steps

    Brown the ribs in olive oil; remove and set aside.

    Soften onion and garlic in the same pot.

  3. 3

    Deglaze with red wine, scraping the bottom.

  4. 4

    Add tomatoes and the ribs back in. Bring to a bare simmer.

  5. 5

    Simmer uncovered 3–4 hours, stirring now and then. Finish with basil.
